invented a new couscous recipe to go with a chicken tagine

to those who like exotic food but not the hours it takes to cook.....

first the chicken tagine (NOT my invention)

3 lbs skinless chicken thighs
1 jumbo onion-diced
2 large cinnamon sticks
2t tumeric
½ lemon’s zest
3/4 inch grated ginger
4 garlic cloves-crushed
1/3 cup raisins
1 16 oz can chickpeas- drained and washed
salt
oil

sautee onion in a cast iron casserole pot until transparent. Add chicken, spices, garlic, raisins, zest, and salt, and cover (there should be liquid in the pot… if not, add water). Simmer until chicken is cooked, roughly 30 min. Add chickpeas and adjust seasoning.

'if sher was moroccan' couscous

2.5 cups couscous
2.5 cups water
1 large onion-diced
4-6 T butter
½ lemon’s zest
3 garlic cloves, crushed
½ inch ginger, grated
½ cup raisins
salt

Sautee onion in butter until clear. Add garlic, ginger, salt, raisins, and continue sautéing. Add dry couscous and lemon zest, sautee another couple min, then add 3 cups water, stir to combine, let come to a simmer and take of heat and cover. Fluff 5 min later…….

soooooo good.....

i want to have dinner at your house when Dh is away!!! hahaha...mac and cheese is about as exotic as i get when he is gone!!

thanks.... I guess I just get bored with eating the same things all the time. I need a lot of variety.

I have actually fretted over what will happen once I go through all nationalities of cuisine there will be nothing new anymore

I am so embarrassed that I ate a Smart Ones frozen lasagna for dinner tonight.
