anyone have a 'lite' recipe for eggplant

anyone have a 'lite' recipe for eggplant
aka...no eggplant parm...since its so heavy...I have an eggplant that is going to go any day...I'd like to use it up

You can just roast it in the oven or on the bbq until it softens - then peel in, chop up the softened eggplant, add some chopped garlic, salt, pepper and a little olive oile - and if you want chopped parsely. Its like a dip - I've heard it called poor man's caviar before. very yummy!ETA: or you can slice it and brush the sides with some olive oil and then bake it in the oven at 350 for about 15 minutes - turning them once, when half the time has passed. It tastes great as a topping to a turkey sandwich.

interesting....it can't hurt to make since I will have to throw it away if it goes bad...do I mash it up? or just cut it really small...to look like cavier?

WHen it is cooked - the lower part of the eggplant with the seeds is mostly mashed from teh cooking - it is the higher part of the eggplant that is a bit more fibery that needs to be chopped finely - you will see the consistency when you cook it - it ends up looking like a dip (i think they call it caviar bec of the seeds)I hope that made sense...

oooh, that sounds good.I also like to saute it in a pan, cooking spray, when cooked at tomatoes sauce. Or lots of garlic and other veggies.
you can also bread with egg whites and bake in oven. (coat pan with cooking spray)
add just sauce, no cheese, or sprinkle with parm cheese

well...it was interesting....when the smoke alarm went off I figured that the eggplant was done...so I peeled it...but it wasn't completely mushy....so I tried to put it in with out the peel and that didn't really work...but the part that did work was good!!!

Easy- cut it into cubes- put in roasting pan and drizzle w. EVOO, salt & pepper- roast @ 400 degrees for about 20-25 minutes... so good.You can do this w. any veggie.

Cut into cubes and saute in a pan with a little olive oil and cubed zuchini and yellow squash. Saute garlic and onions in another pan. until see thorugh. combine with veggies and add big can of chopped tomatoes and some seasonings. Simmer for 20 - 30 minutes - delish over pasta or even alone.

To follow-up on jennbaby... you can bread them lightly with egg beaters, bake them in the oven. Then after they are baked. Letr them stand. When you are ready to use them, add sauce, top with fat free mozzarella nad bake at 350 until melted!Welcome New Vendors
