Any good steak recipes? Bring 'em on...
Filet, strip, whatever.....interesting sauces, marinades, rubs....If I can ever get FH out of bed I'm gonna send him to the butcher.....

I really like the meat marinades by mccormack - esp the regular and southwestern.I also love sirloin or rib eye marinaded in terriake sauce with some fresh garlic.

Rub a steak with lime juice, honey, garlic, salt, pepper, oregano, and basil, and let it sit like that for at least an hour in the fridge before you cook it. It's also better if you put a couple of little slashes in the meat.Yummy!!

I've found that the quality of the ribeye steaks at COSTCO is so good that all you have to do is sprinkle them with a little lawry's season salt and some pepper and toss them in the broiler.They don't even need marinade.

I'm with Susan...if it's a good quality rib eye, I like them as is.Here's how we make rib eye steaks. I'd prefer them on the BBQ, but we live in an apartment so it's not an option!
Bring steaks to room temperature. Coat very lightly with oil (we use canola), salt and pepper.
Heat a cast iron pan in 500degree oven until it reaches temperature.
Remove pan and place on stove on high heat.
Place steak in pan. Cook for 30 seconds, turn with tongs, then cook for another 30 seconds.
Return pan (and steak) to the 500degree oven and cook for 2 minutes. Flip and cook for another 2 minutes.
Let rest for a minute or two before cutting.
This will yield a medium rare steak.

I eat my steak (usually flank) with chimicurri sauce... one cup fresh parsley, 3/4 cup fresh cilantro, 1 clove garlic- process in food processor... add about 1/2 c of olive oil and a few tablespoons of vinegar, ground cumin and cayenne pepper to taste.Soo good

Scor the meat first (run a knife over it in different directions to get it to absorb)Pick one marinate and then grill (or broil)

If you like blue cheeseMix some blue cheese with cream and 'panko'
Panko is japanese bread crumbs, the kind that they use for tempura.
Anyway, mix together blue cheese, panko and cream to make a thick paste (I have no measurements because I always wing it)
Sear the steaks on both sides.
(I usually do this in a cast iron pan) and then put the steaks under the broiler for about 3 minutes per side. (Assuming they're about an 1- 1 1/2 inches thick)
Then remove the steaks, spread the blue cheese mix on top and return to the broiler for about 5 minutes. The blue cheese will melt and you should have a golden crust on top of the steak.
What I normally do with the juice in the pan from searing the steaks is throw in 2 tbsp. butter, brown some shallots and then add 2 cups beef stock and 1 cup red wine.
Reduce the mixture to half. Add a tablespoon of brown sugar if you want to take the bite off the wine. Add pepper to taste.
Makes an awesome gravy.

you grilling or putting it in the oven?We often purchase tenderloins (8-10lbs) from the butcher (have them trim it out) and just rub it in cracked black pepper. Then grill!
