Here's a cute COOKIE! I will post the pic in a sec! I got it off of Martha Stewart!
Bird's Nest Cookies Makes 2 dozen These thin chocolate cookies with ganache icing dipped into grated coconut make the perfect nests for two or three miniature chocolate eggs. 1 cup (2 sticks) unsalted butter, room temperature 1/2 cup plus 2 tablespoons sugar 1 3/4 cups all-purpose flour, plus more for rolling out dough 1/4 teaspoon salt 1/2 cup Dutch-process cocoa powder, sifted 6 ounces semisweet chocolate, chopped 1 cup heavy cream 1 teaspoon instant espresso powder Gel-paste food coloring (optional) 2 cups sweetened shredded coconut 6 dozen candy-coated chocolate eggs 1. Heat oven to 350°; line two baking sheets with parchment paper, and set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine butter and sugar. 2. In a large bowl, combine flour, salt, and cocoa powder. Add flour mixture to butter mixture; mix on low speed just until a stiff dough forms, about 2 minutes. Transfer dough to a piece of plastic wrap, wrap tightly, and chill until firm, about 30 minutes. 3. Place chocolate, heavy cream, and espresso powder in a medium heat-proof bowl. Place the bowl over a pan of gently simmering water, stirring occasionally, until chocolate has melted. Remove bowl from heat, and set the chocolate ganache aside to cool, stirring occasionally. 4. On a lightly floured surface, roll out chilled dough to a 1/4-inch thickness. Using a 2 1/4-inch-round cookie cutter, cut out 24 cookies; place them on lined baking sheets. Chill cookies until firm, about 20 minutes. 5. Bake cookies until set, about 14 minutes. Transfer to a wire rack to cool completely. 6. For colored coconut, combine a few drops of food coloring with 3 tablespoons water in a medium bowl. Stir in coconut; mix until evenly colored. Spread on an ungreased baking sheet; bake just until dry, about 12 minutes, being careful not to brown. Let coconut cool; transfer to a small bowl. 7. When the ganache has cooled to room temperature, whisk until it becomes stiff enough to pipe. Transfer ganache to a pastry bag fitted with a 3/8-inch-round tip, and pipe around perimeters of cookies. Dip each cookie, ganache-side down, into plain or colored coconut. Fill "nests" with candy-coated chocolate eggs, 2 or 3 eggs per nest. Store cookies in an airtight container, refrigerated, up to 3 days.

Here's another off of Martha Stewart. I did a search for Easter Desserts
Lemon Meringue Cake Serves 8 to 10 This is a smaller cake baked in a seven-inch tube pan. The recipe can be doubled to use a standard ten-inch tube pan; just increase the baking time to sixty to sixty-five minutes. 1 cup plus 2 tablespoons sifted cake flour(not self-rising) 1 1/2 teaspoons baking powder 1/4 teaspoon salt 3 large eggs, separated, room temperature 3/4 cup superfine sugar 1/4 cup vegetable oil 1 teaspoon grated orange zest 1 teaspoon grated lemon zest 4 tablespoons fresh orange juice 2 tablespoons fresh lemon juice Pinch of cream of tartar Lemon Curd Swiss Meringue 1. Heat oven to 325°. Sift together flour, baking powder, and salt twice. Set aside. 2. Place egg yolks in the large bowl of an electric mixer. Beat on medium high until pale and foamy, 3 to 5 minutes. Gradually add 1/2 cup of the sugar, beating until very pale and puffy, 5 to 7 minutes. 3. Add oil in a steady stream. Add zests; beat for 1 minute. Reduce speed to medium low, and add flour mixture alternately with juices, flour in 4 parts and liquid in 3 parts, beginning and ending with the flour. Set aside. 4. In a clean bowl, whip egg whites on low speed until foamy. Add cream of tartar, and increase speed to medium high. Beat until soft peaks form. Gradually add remaining sugar, and beat for 1 1/2 minutes, or until whites are glossy and stiff peaks form. 5. Stir a quarter of the whites into the flour-yolk mixture. Fold in remaining whites carefully, trying not to deflate the batter. Gently pour into an ungreased 7-inch tube pan. Bake until cake is golden brown and a cake tester comes out clean, about 40 minutes. 6. Remove cake from oven, and invert immediately. Cool completely in pan. Run a knife around sides to loosen, and remove outer part of pan. Run a knife along bottom and around tube to loosen and remove tube. Turn upside down onto a cake round slightly smaller than the cake, and slice horizontally into 3 layers using a serrated knife. 7. Spread half the filling on the bottom layer, and cover with the middle layer. Spread remaining filling on middle layer, and cover with top layer. Refrigerate overnight, or until set. Brush off excess crumbs with a dry pastry brush. 8. Heat oven to 400°. Prepare meringue, and spread it all over cake, swirling with an icing spatula as desired. Set cake, still on cake round, on an oiled baking sheet, and place in oven. Bake, watching carefully, until meringue is brown around edges and beginning to brown elsewhere. Transfer to a serving plate and serve as soon as possible. Slice using a knife dipped in hot water and wiped dry.

Okay okay, one more (not taken from martha though)
Chocolate Easter Eggs Serves: 16-24 pieces
1 cup soft butter 4 tsp vanilla 2 tsp salt 4 tsp vanilla 1 can condensed milk (Favour Brand) 10 cups icing sugar 1 tsp. yellow food colouring 1 lb (500g). Semisweet chocolate
1.-Whisk butter, salt and vanilla until fluffy. Add milk, beat in sugar. Blend until stiff. Dust with brown sugar. Knead til smooth.
2.-Set aside more then 2/3 of mixture. To the remaining mixture add yellow food colouring. Blend in well. Divide yellow and white into 16 or 24 pieces. Shape yellow into ball, mould white around yellow to form an egg shape. Dry at room temperature on paper towels for 24 hours.
3.-Melt chocolate in double boiler or in microwave until smooth. Dip eggs in chocolate. (paraffin wax may be added and melted with chocolate to avoid chocolate from melting in your hands). Once dipped cool at room temperature. Refrigerate after cool.
4.-When sliced these eggs will have a white cream filling with a yellow filling that appears to be the yolk. They are ready to be sitting in an Easter basket!!!
