Eggplant?
Ok ladies, I need your help. All weekend FH has been making jokes about my cooking and his need for the poison control number. It really hurts my feelings and I told him I wouldn't cook anymore but he says he does like my cooking.
Anyway his favorite food is eggplant and if I can make a really good eggplant dish maybe I can get him to stop! LOL. Anyone have any recipes for me?

Instead of 'breading' it, get course cut parmesan/romano/asiago (DiGiorno, in the Dairy Aisle), cut the eggplant into thick cutlets, beat 2 eggs (or more), dip the eggplant then drag it through the cheese - get it nice and thick and heavily coated. Then fry until the eggplant softens and the cheese browns. Doesn't even need sauce. Serve it with lightly oiled pasta (Iike garlic and oil).Have you ever tried spaghetti squash? mmmmmm!
(oh, and the above also works great with salmon steaks)

Eggplant Parmesan is really easy and can really make someone fall in love with you lolAll you need to do is peel the skin off of the eggplant and then cut the eggplant into rounds (don't worry, they may brown a bit but you can always keep them in a dish of water until you are ready to use them) and dip them in egg and then bread crumbs like you would normally bread something.
Fry them all up and lay them on a pan with paper towel to soak up some of the oil. Eggplant is very porous and will soak up any liquid so make sure you have enough Oil on hand to fry it up in. Then just lay the slices of fried eggplant into a baking dish, and ladel on some sauce then some cheese and then another layer of eggplant. Almost like you would with a lasagna, just layering. Bake until the cheese is melted and as golden brown as you like and there you have it.
It is simple and it wins them over everytime. If you want to get more technial go to Epicurious.com and search for 'Eggplant Parmasean' and see what comes up. They have alot of great, simple , yummy recipes :) Good Luck.
And tell him that if he thinks your cooking *****, he should cook then:-P

i like this and it is pretty healthyGet olive oil
fresh garlic
salt
pepper
onion powder
and hot pepper (if you like spicey)
mix the seasonings into the oil and then grind the garlic into the oil as well.
the garlic needs to be really mashed up to get the true flavor right.
then you brush this onto the eggplant and then grill it is sooooo yummmy!!
