Spicy Casserole

1 cup uncooked, long grain rice
2 14 oz cans stewed tomatoes with liquid
1 14 oz can black beans, drained and rinsed
1/2 onion, chopped
1/2 green pepper, chopped

Something spicy-either a chopped jalepeno or a few dashes of your favorite hot sauce. Make as hot or as mild as you like.

3-4 boneless, skinless chicken breasts

Chili seasoning (either your own recipe or the store bought packet).

Cheese (optional)

1)Mix first six ingredients in a bowl. Then pour in a lightly greased oblong baking dish. Smooth out evenly so all the rice is in the liquid.

2)Season chicken on both sides with chili seasoning and nestle into the top of the rice mixture.

3)Cover tightly with aluminum foil and bake at 350 for 45 minutes.

4)Remove foil, top with cheese if desired, and continue baking at 350 for another 15 minutes or until the chicken is done.

You can leave the chicken out completely to make it vegetarian or to just use as a simple side dish.
