NWR- Pot Luck Lunch

Any Cooks out there? We are having a Pot Luck Lunch at work- basically we all have to bring in some sort of dish-

I'm not a cook- but do need to make something. It has to be something easy.

We don't have an oven at work- so it needs to be something that doesn't have to be heated up.

Any ideas?

The easiest thing to make is an insalata caprese.

Fresh Tomatoes, Basil and buffalo mozzrella. Thinly slice tomatoes and mozzeralla (about 1/2 to an inch) layer with basil in between, sprinkle with salt and pepper, drizzle with good EVOO.

done. and it looks tres gourmet!

I always like to make a pasta salad for our pot luck lunches. It's pretty easy, I'm not much of a cook either!

Make pasta, any kind will work but I prefer rotelli.
Make a bag of diced veggies from the freezer aisle.
Mix everything together in a large bowl with some Ranch dressing. Refridgerate. Then before serving put some more dressing on.

Easier than pie!! GL!!

This is also good with Italian dressing (that's how my mommy makes it) . Yum!

My suggestion is to make a try of mini sandwiches. You can either cut regular sandwiches into 4 or use a cookie cutter to get fun shapes. This way you can please everyone -- you'll have a veggie options as well as multiple non-veggie options.

1. Mini Turkey and Cheese
2. Ham and Swiss
3. PBJ
4. Hummus and veggies
5. Brie and Apples
6. Egg Salad
7. Tuna Salad

I made a cute little platter w/ humus and diff. spreads and pita bread cut up...

ha! I hate cooking. we had a pot luck at work once and i made a fruit salad. ironically, it got the most compliments and it was ridiculously easy to make.

It's:

Minted Fruit Salad:
Ingredients:
sugar
lil bit of orange juice
cut up assorted fresh fruit (get some melons as they soak up the mint and sugar well)
Fresh mint leaves

cut the fruit, stick it in a bowl, then add sugar and mix it around. add a lil bit of orange juice, then sprinkle mint leaves. Stick it in fridge over night. next morning, garnish with a lil more mint leaves

good to go!

How about a Quiche? Very simple.
Cup of milk
Cup of cheese (whatever you prefer)
4 eggs
Pie Crust
Salt and Pepper to taste
and a cup of your main ingredient, whether it be chopped broccolli, diced ham, or crumbled bacon. Mix all of your ingredients in a bowl, pour into pie crust and cook for 45-60 minutes. Can be served heated or at room tempeture. It's always a hit.

I agree-if you don't really cook do something simple like a caesar salad or fruit salad. Worst comes to worst buy something from a local deli.
