looking for fish recipes....

I would love to learn to cook fish. I am new to the whole cooking scene so i am scared!
I also only eat sole (flounder), Chilean sea bass, shrimp and lobster. DH will eat tuna and swordfish as well.
I am also picky with how foods are prepared. I don't like to fry anything.
If anyone can help me out i would be greatly appreciative.

How about Salmon? I have other recipes for fishies...

Broiled stuffed filet of sole
Shrimp Scampi
Blackened Swordfish
Blackened Catfish (you will like catfish)
Pan Fried Catfish...

got some others...

I love grilled swordfish topped with fresh pesto (after the fish is cooked).

thanks for posting. I'm more of a sole/flounder or shrimp person. Any recipes with those type of fish would be appreciated. Like lemon filet of sole or something. '

I recently came up with this really good like salsa/salad type of thing to go over fish or chicken or even beef i guess... but i made it with friend bluefish but you can put it on grilled fish too....


Dice up ripe tom.

Diced up feta cheese

red onions

raw peppers chopped (red, green, yellow) which ever you like

through it all together and make up some good seasonings toss it all together I also add hot sauce to it the hot sauce is what really gives it a kick but it doesnt give it that typical 'salsa' taste you get from jalepenos...but you can add any fresh herbs to it or try to add diced fruit to it maybe pineapple or mango or something....enjoy!

I love flounder too and came across this recipe at a WW meeting.

lightly dip flounder in breadcrumbs then place on a baking sheet

top each piece with some feta cheese

place another piece of breaded fish on top

bake at 400 for 20 minutes.

It is so quick and easy and absolutely delicious!

If you like filet of sole you might want to try this, its quick and easy:

preheat oven to 450

about 1 1/2 lbs of filet of sole
2 cloves garlic minced
1 stick butter
1/2 cup white wine
chopped parsley
salt, pepper

place fish in a baking sheet and salt lightly on one side.

in a skillet(or frying pan) melt the butter and sautee the garlic careful not to burn it. shut the flame off and add the wine. turn the flame on again on low and stir until the alchohol cooks out.(about 2-3 min) add parsley and pour over fish. Finish with some fresh pepper and put into oven for about 7 min.
serve with a baked potato.

Here is one of my favorites.

1 or 2 good size center filets from a firm white fish.. like cod.

Drizzle one side with extra virgin olive oil, and then season with salt, pepper and a sprinkle of garlic and place season side down in an oven safe pan that you have heated up over medium high heat *after spraying it with PAM* Season the side that is facing up with the same stuff. DO NOT MOVE FISH ONCE YOU HAVE PLACED IT.

After about 2 minutes, add 1.5-2 good handfuls of grape tomatoes (that you have tossed in olive oil, salt and pepper) to the pan and cook another minute. DO NOT TURN FISH OVER OR MOVE IT.

Take entire pan and stick it in an oven that has been preheated to 375 degrees. Let is cook for 10-15 minutes - or until the fish is cooked through.

Remove pan and take fish out. Put fish SEARED SIDE UP on the plate. Put tomatoes all around it.

Put pan back on stove and deglaze with a half cup of white wine, juice of 1 lemon and half cup of chicken broth. Add 1.5 teaspoons of chicken base or 1 boullion cube. Bring to a boil, reduce heat and let simmer for about 3 minutes. Whisk in a bit of wondra... just enough to get it a LITTLE bit thicker and adjust salt and pepper to taste. Pour over fish and tomatoes. Sprinkle fresh parsley over everything. Serve with lemon parsley rice and a nice side salad.

Yum.

I don't really eat fish but i LOVE Tilapia. I think I like it so much because it's not fishy tasting. Williams Sonoma makes a seasoning called potlatch seasoning, it tastes really yummy on fish, I usually mix it with some bread crumbs and fry it in pam.
