An old boyfriend taught me how to make this and since then its been my 'special occasion' dinner for family and friends. Plus its yummy
Chicken Francese(or Shrimp)
1 1/2 pounds of chicken breasts- pounded thin and seasoned with salt and pepper or
2 pounds of extra large shrimp
2 extra large eggs
1/4 cup of cooking oil(canola is fine)
1/4 cup of flour
1/4 cup of white wine or champagne
1/4 cup of chicken broth
2 tablespoons of butter
juice of one whole lemon
Heat oil in large frying pan until very hot(drop in water droplets and when it sizzles its fine).
Drag the chicken(shrimp) in flour then dip into beaten egg. Quickly drop the coated chicken(shrimp) in the hot oil and cook for about 2 minute per side until brown. Cook all chicken(shrimp), remove from pan and put aside.
Drain the oil- add the butter, chicken broth, white wine or champage and the juiced lemon to the pan. Add back the chicken to the mixture and simmer for 5 minutes to thicken the sauce slightly.
Serve immediately. Garnish with lemon dipped in parsely flakes if desired. I usually serve it with rice pilaf and broccoli.

Anti-Pasta salad1 box tri color rotini
1 bottle Italian or vinagrette dressing
1/2 can roasted red peppers
1 can sliced olives
1 can artichoke hearts chopped up
1/2 pound thick sliced hard salami
1 pkg Polly-O Mozzarella
Make Pasta
Chop up ingredients
mix together with dressing well
Tastes even better the next day!!!

Yummy...but why do are these your favorite recipes...do they represent anything or anyone...do they have sentimental value?BTW-they do sound yummy so far...
