Any good chicken cutlet recipes?

I am so tired of the ones I make. Any good ones out there?

I've made them a few times where you ad salsa to the egg mixture. Dip them in and bread them and then bake at 350 until done. It's supposed to be 'southwest style' or something. They're pretty good.

My SIL makes Mexican Chicken
Sprinkle taco seasoning over chicken breasts or cutlets. Pour a jar of salsa over them, sprinkle shredded cheese and bake for 20 minutes or until done.

Greek Chicken
Marinate chunks of chicken or cutlets in 3 tbs olive oil, 1/2 lemon squeezed, 1 clove crushed garlic, 1 tbs oregano, salt & pepper. (I use a zip lock bag to marinate the chicken) Grill and serve on a pita with chopped tomatoes & sliced white onion.

Chicken Roll Up
Fry sliced button mushrooms in butter until brown. In a bowl mix bread crumbs, parmesean cheese, salt, pepper, garlic powder. Lay chicken cutlets flat, season with salt & pepper and put a layer of the bread crumb mixture on the cutlet, add some mushrooms. Roll the chicken up and secure with toothpicks. Bake at 325 for about 20-30 minutes.
Can add some gravy to the tray and some mushrooms around and make a sauce for the chicken.

Bread Chicken Cutlets with egg & bread crumbs.
Lay cutlets flat.
Layer a slice of virginia ham (sliced thicker than normal)
Layer a slice of *either* mozzarella or swiss cheese
Roll up chicken cutlet, secure with toothpick.
Bake at 350 for 20-30 minutes until done.

Thanks so much for posting this one. I thought you roll up the chicken first and then bread the cutlets. That's why it never comes out good.

My easy cutlet method is a variation on the Greek style posted above.
I very lightly coat thin cutlets with olive oil, salt, pepper and dried oregano. I brown them quickly in a hot skillet til just done. It doesn't take long at all. Plus, my husband gets very critical of over-cooked chicken. When it's done, I have a flat platter ready with squeezed fresh lemon. The hot chicken goes directly into the lemon juice and I turn and spoon lemon over it. We like it this way. We found that when lemon juice gets cooked with the chicken it gets bitter and loses that freshness.

My mom doesn't make a sauce for it but I guess you can open a can of chicken gravy and spice it up how you like it ... maybe add some fried mushrooms to the gravy, salt & pepper. I think that might taste good.

That sounds like a really good idea with the lemon juice on the platter. I'll have to try that instead! Plus DH doesn;t like 'lemon taste' so I can do that separately for mine and keep his plain then.

Tzaziki, but I don't think it's the real tzaziki sauce. I'm italian, not greek. I mixed it all together to try to get it to taste like the Greek sauce. It doesn't taste as good as when I by it at a Greek restaurant but I try

for the thicker boneless, skinless chicken breasts I marinate over night in juice of one lemon (once squeezed I throw the lemon halves in too), 4 cloves sliced garlic, salt, pepper, 2 tablespoons olive oil, fresh nutmeg and cinnamon. I know this sounds gross but it is SO GOOD... Very middle eastern like.

I cook on stove top so both sides are browned and then put in the oven at 400 degrees

OK, the real tzaziki sauce is made with a very rich yogurt. You can buy authentic Greek yogurt called Total, but it is quite expensive. I buy the large size yogurt with the highest fat content - low fat just won't do it. Then I strain it overnight in cheesecloth or even a coffee filter. I grate the cucumber - remove the seeds first - and then squeeze it to dry in a kitchen towel.
After adding the cucumber and minced garlic, stir in a little olive oil. lemon or vinegar and top with a little dill. I don't mix it in but it looks nice on top.
You can also mix in a little sour cream if you find the yogurt too tart.
I believe this is as close to the real one as you can get, without using a rich homemade yogurt.

PS - We don't put onion in it. Is that something you added on your own? I've never had it like that either at a restaurant or at any of my friend's homes.

thanks for the recipe. I made mine up with ingredients I had in the house one day. And I used fat free plain yogurt which definitely explains why it's not thick & rich. Thanks again.

I occasionally make it with FF yogurt myself - always straining it first - and I use it to top the chicken cutlets, souvlaki or as a salad dressing. As you realized, though, it doesn't have the same texture or the mouth-feel. I watch the calories and the cholesterol. It's a decent compromise, but never for company.

The other night, I experimented and everyone seemed to love it.

Butterfly the chicken cutlets - season w/ a tiny bit of season salt and Italian Seasonings. Stick 'em in a pan w/ olive oil (or grill if you'd like) til they're cooked.

Lay a slice of prosciutto on top, then cover with a slice of fresh mozzerella.

Bake in the oven enough to warm the prosciutto and melt the cheese a little bit, and voila!!! Done. VERY easy.

Also, if you want to add a veggie in there, lay some asparagus between the prosciutto and the cheese - it's DELISH!!!

I lay the chicken, 1 piece ham (deli), 1 piece cheese (swiss) fold over 1/3, brush w/ Dijon mustard, fold over again, brush w/ mustard, place in bread crumbs, brush top, flip into bread crumbs then bake. It gives a little extra layer of flavor. The mustard acts as a glue.

PLACE SEAM SIDE DOWN

I'm so Irish so I buy it at Costco. They have a great Tzaziki! Low in fat and only 25 calories per serving! Doesnt get better than that!

I use Yarlsburg Light swiss cheese...I get the block and cut my own pieces....its yummy and much lower in calories and fat than other swiss.

I sometimes bake chicken cutlets in italian dressing. Serve over rice. It's simple, tastes great and low fat!

I'll add a can of green beans to the cutlets too.

My MIL told me about this one -it's really quick and easy for breaded chicken cutlets.

Dip chicken breasts in italian dressing, then coat with bread crumbs and cook.
