When I met with John I think he said that Michele makes all the bouquets and that everyone has their own specialty. So I think everyone will work on a wedding. For example John will do the CP's, Michele will do the bouquets, etc. I think it would be perfectly fine to work with her in setting everything up. Here is a picture of a bouquet that Michele made.

I never met with anyone from Florissima but I saw their work at the Oheka showcase and it was STUNNING! The flowers were so vibrant and gorgeous. I can see how you have a tough decision on your hands.

Is there a large price difference?

I faced the very same debate. I went with Flower Michele and regretted it. Friends have used Florissima and I would to if I had to do it again. FM me if you need more info.
