Lets Start Thanksgiving Recipes!

I'm having Thanksgiving at my house again this year. I usually like to try something new each year...any suggestions?

Re: Lets Start Thanksgiving Recipes!

I alwaysnamke potato cheddar choweder..it's a hit. I'll get you the exact recipe (when i find it!!!!), but it's basically, you cook onions in melted butter, then add vegetable brother and chopped up potatoes, boil, then you use a food mill or a braun stick to puree it all, add sage and pepper, a little thickener (butter, flour and brother mixed together) and soem milk for smoothness...at the very end, add shredded cheddar, then garnish with shredded cheddar. SOOO good!

Also zucchini pie

1 cup bisquick
3 medium zucchini sliced
a little less and 1/2 cup oil
1/2 cup or more parm cheese
4 eggs
1 medium onion
Mix it all together, bale it in a pyrex for 45 min on 350 (or until golden brown on top)

Re: Lets Start Thanksgiving Recipes!

Bubby's Stuffing:

Ok I don't know the exact measurements I just play it by feel But this is really good and really easy:

Ritz Crackers
Saltine Crackers
Butter
Onions
Canned Mushrooms
Season to taste

Saute onions and mushrooms in butter. Crush crackers in large bowl. Add mushroom/onion/butter mixture to bowl. You want the the mixture to be moist but not mushy. If its too dry, add a little chicken broth. Add what ever seasonings you want. I usually use garlic & onion powder, pepper parsley. Place in baking pan and bake until the top is golden brown. When it cools a little you cut it into bars. It is so good its a little flaky but moist & buttery. Enjoy!

This is stuffing? Cut into bars? Sounds neat!

Re: Lets Start Thanksgiving Recipes!

I don't particularly like sweet potatoes, and I usually hate fruit mixed with food, but my mom makes this recipe every year and it is one of my all-time favorite side dishes.
(To save time, she bakes the potatoes the day before.)

SMASHED SWEET POTATOES WITH APPLES

Potatoes:
8 pounds (about 12 large) sweet potatoes
1 cup orange juice
1 cup heavy cream
8 tbsp. butter, melted
1/2 cup light brown sugar
2 tsp. nutmeg
1 tsp. cinnamon
4 tsp. salt
2 tsp. pepper

Topping:
6 tbsp. butter
6 McIntosh apples, peeled, cored, and cut into eighths
6 tbsp. light brown sugar

1. Preheat oven to 375. Scrub potatoes, then prick several times with a fork. Bake 1 hour or until very soft when pierced with a knife. Combine orange juice, cream, butter, brown sugar, nutmeg, cinnamon, salt and pepper.

2. Remove potatoes from oven. Once cooled, scoop out the insides with a spoon. Place 1/2 of sweet potato meat into the bowl of an electric mixer. Add 1/2 of juice and cream mixture, blend until combined but not smooth, and pour into a large baking dish. Repeat with remaining potatoes and juice and cream mixture, and add to baking dish.

3. To make topping, melt butter in a large skillet over medium-high heat. Add apple wedges and brown sugar; cook about 10 minutes, turning apples occassionally, until lightly browned on both sides. Place on top of sweet potatoes (can be refrigerated at this point) and bake 30 minutes, until heated through. (Note: if refrigerating before baking, cook 45 minutes.)

Makes 15-20 servings.
