Looking for Stuffed Peppers Recipes

Anyone have any flavorful stuffed pepper recipes? I am looking to make the stuffed peppers with either orange, red or yellow peppers....They have the best taste.

I know that you use a ground beef with seasoning....kind of like a taco type meat, but not as spicy and shove in pepper and top with cheese. Some people put rice in it, some serve rice on the side.

I'll find one for you!

Stuffed Green Peppers II
An easy and delicious way to prepare green peppers as a
main dish. Prep Time: approx. 20 Minutes. Cook Time:
approx. 25 Minutes. Ready in: approx. 45 Minutes. Makes 6
servings.

1 1/2 pounds lean ground beef
1 onion, chopped
3/4 cup uncooked instant rice
3/4 cup water
1 (14.5 ounce) can peeled and
diced tomatoes with juice
1 (14.5 ounce) can stewed
tomatoes, chopped
salt and pepper to taste
6 large green bell peppers
1 (16 ounce) jar spaghetti sauce


Directions
1 In a large skillet or medium stock pot, brown the beef
and onion over medium heat. Drain fat. Add rice, water,
diced tomatoes, and stewed tomatoes. Season with salt and
pepper. Simmer until rice is tender. Preheat oven to 325
degrees F (165 degrees C).
2 Cut the tops off the bell peppers and clean out the
seeds and membrane. (Note: You may have to slightly slice
the bottom of the peppers to make them stand up.) Fill
peppers with meat mixture.
3 Place in a casserole dish and bake in a preheated oven
for 20 minutes or until peppers are as tender as you like.
Served topped with spaghetti sauce.

I usually mix raw chopped meat with cooked rice, bread crumb, finely chopped onions, an egg, some ketchup and basil. Cut peppers at the top so that you can fill them, but don't overpack. I stand them up in two cans tomato sauce (I use Del Monte, it tastes the best) equal parts water (more or less to your taste) and then simmer for about an hour.

I hardly ever follow recipes, and sadly, because I'm the type to throw things together and not write anything down .. I usually have a hard time duplicating anything I make.

Basically, my filling consists of a good ground beef .. usually ground sirloin .. with finely chopped sauteed onions and mushrooms .. add salt and pepper .. squeeze in ketchup to desired consistency .. add a bit of dijon mustard .. just for a little kick .. then take that fully cooked mixture, and pack it into peppers .. I prefer red or orange, but also like yellow .. and I don't mind green.

If I'm really in a hurry .. I dice up the peppers, and add them into the mixture last, just to sweat them a bit without taking away their crispness.

I use yellow rice and turkey chop meat and chopped tomatoes, garlic and onions. Sometimes I add a little shredded cheese at the end.
I prefer the chpped tomatoes to tomato sauce .

I love stuffed peppers! Here's a recipe I made up while on the South Beach Diet before my wedding. I never measure anything, so I hope this is easy enough for someone else to follow! :)

Brown 1 pound ground beef or sirloin with 1 sliced clove of garlic. Add chopped onions, chopped tomatoes, chopped chick peas, crumbled feta cheese (about 1/2 cup of each) and half bag of frozen spinach. Add seasoned salt, pepper and oregano to taste. Cook until all the cheese is melted and spinach is thawed. Hollow out two green bell peppers, slice in half and rub with olive oil. Place peppers in baking dish, and add the meat mixture. Cook at 350 for about 10 minutes, just to warm the peppers. At 5 minutes, sprinkle cheese (any type is good, but crumbled feta is my fav!) over tops and bake another 5 minutes. Feeds two.

This is the easiest recipe and it's impossible to mess up, and it's so good! My sis always begs me to make this whenever she comes over for dinner, and the's the pickiest eater in the world! Well, I hope you and Danielle like it too

ETA - I just reread your post about what peppers you want to use. I use bell peppers bc that's what we normally have on hand, but this recipe works great with other peppers too!
