anyone have a good recipe for salmon
i love salmon and im always looking for new ways to make it. any idea??

Marinate in balsamic vinegar, and oil for 1/2 hour, and bbq...delicious!

Salmon is my new fav meal!I have three favorites lately...
1)One is to heat in skillet 1 cup of low sodium chicken broth with some dried red peppers, salt, pepper, onion powder or diced onions, and some minced garlic...when hot add the salmon fillet and cook till pink, flipping as needed...Add crumbled feta cheese to top untill slightly melting...
This is a spicy meal though ( the peppers) but I make that about 2x a week, its very fast!
2) Another way is to make a dressing of
1/2 cup butter/margarine melted
2 tsps of basil
2 tsps of parmesan cheese
1 clove garlic
Mix all in a bowl..
Brush 1/2 dressing on top of salmon filet and bake for about 15 minutes...add 2nd half of dressing
3)I also make salmon cakes a lot with a dill sauce
To make the cakes you need about 1lb of cooked salmon, but you can use 1 can of salmon as well ( fresh tastes better)
1 cup of Parmesan cheese
2 eggs
1/2 cup of parsley
2 tsps of lemon juice
1 tbls of mayo
1/4 tsp of pepper
1/4 cup of green onion
1/4 cup of veg. oil
Mix in a bowl the salmon( crumbled), cheese, egss, parsley, green onion, lemon juice, pepper and mayo..
Form into 8 patties
cook in veg. oil about 4 minutes on each saide
Dill Dressing
2/3 cup mayo
1 tbls of fresh dill ( if using dried, its like 1/4)
2 cloves of garlic
salt and pepper
Mix all together for sauce
I love the way these come out, but they take more time so I make about 8 and heat them up during the week

I marinate in olive oil, juice of 1 or 2 limes, minced garlic and minced red chili peppers. Then grill a few minutes on each side

Salmon and Baked Clams~YumTake a large piece of salmon and cut it down the middle (cooks easier that way). Put the salmon in flour and place in a pyrex dish (spray the bottom with pam so it doesn't stick)
Baked clams: Put olive oil in a frying pan and put in a tablespoon of minced garlic, some basil, oregano, and parsley. Let that cook under a low flame. Then open up two cans of minced clams (it's in a yellow and blue can~I forgot the brand) and pour that in the frying pan~juice and all. Then you will need progresso italian bread crumbs. Start pouring in bread crumbs to absorb the clam juice~but not too much or your clams will be dry. Let that cook for 5 minutes and then put the baked clam mix on top of the salmon, sprinkle with paprika and cook for 30-45 minutes at 350. To see if it's cooked take a fork and see if the salmon breaks apart~if it does, then you're done!!

I am not good at cooking at all.How long should I grill Salmon on the BBQ & bake it in the oven for? I am always afraid that its not cooked so I always over cook it.

Fresh salmon....rub it with olive oil & dill ...drizzle with a mixture of dry white wine (i usually use Pinot Grigio), fresh pressed garlic, a touch of soy sauce and dried onion flake. (not fresh onion, it is too strong.) Broil & serve.

Salmon filets come out great on the Foreman grill. I just spread a very tiny amount of olive oil on each side so it doesn't stick and it gets a nice crust on it.Welcome New Vendors
