Appetizers like everyone will be seated at the table or appetizers like horduevers?
I also make a fruit/cheese/cracker plate that gets eaten very fast. Its very easy to make look fancy without having to slave over cooking more stuff.
Another thing I make is stuff mushrooms which are pretty simple to make and cook up right before guests get there. But you're guests have to like mushrooms so its sort of limiting.
There is always shrimp cocktail which is easy but expensive.

I usually do the Cheese/cracker/salami platter, veggies & dip, those costco hors d'oeuvres, shrimp platter, fruit platter, maybe some chips and dip.

my fave is fresh mozzerella balls/pieces wrapped with prociutto & drizzled with balsamic vinagarette. no cooking and so delish!! they have always been a hit when we made them.

Things we always make when we have company over is a cheese and cracker tray, and antipasta platter, stuffed mushrooms, and spinach dip. I'm also making little calzones for a bday party this weekend, but I never made them before so i'm not sure how they are lol.

We do pretty much what everyone has already mentioned, but two dips I almost always use are Friday's Spinach and Artichoke dip and Athenos roasted red pepper hummus. No cooking at all, you just have to nuke the Friday's dip. They go with veggies, chips, anything. They're both always a hit and the hummus is something a little usual....

The easiest dip recipe in the world that will impress.
Get a can/jar of artichoke hearts, NOT marinated, just in water or whatever they are packed in.
In a bowl combine:
1 jar of artichoke hearts 1 cup of mayo 3/4 cup of parmesean cheese
mix it up, pour into small baking dish.
Sprinkle the top with plain bread crumbs, mixed with a little bit more parm cheese.
Bake at 350 until light golden brown on top.
Serve with tortilla chips. Get a sturdy kind like the scoops version.

spinich dip is always a big hit...on the back of the knorrs veggie soup mix box...
cheese and crackers....super easy
I will also cook up some meatballs in a thin tomato/onion sauce
I get chorizo and slice it thin and fry it...and serve in its own juices...
veggie platter is simple and easy too

A quickie-- sort of,
Make your basic meatball recipe, make mini ones- then for the gravy/sauce put equal parts cranbery jelly (the stuff in a can) and tomatoe sauce (speggetti sauce- whatever you like) heat until the cranberry disolves. Add the meatballs for a few mins and serve. You can make regular meatballs for dinner one night and save some extra meat for the apps.
I made them for thanksgiving last year.

I make artichoke dip also, but I serve it with Wheatsworth Crackers, they go great with it.
They are made by Nabisco.

Also Pizza Dip
1 small jar ragu pizza sauce block of cream cheese, 1/2 container of sour cream. Mix all together and put grated Mozzerella on top, about 6 oz. Put in Microwave until hot ans serve with chuncks of italian bread.

I go out and buy a ball of fresh mozzarella and some vine tomatos - slice it all up and put in on a try and put balsamic vinegar on top.
Quick and easy and who doesn't love cheese
Everything else I have requires way too much work.

My favorite...stuff mushrooms. Very easy to make and it doesn't take too much time.
Also Curly2003'2 HUBBY's FAV:
STUFFED MUSHROOM CAPS
1 dozen mediums to small-sized mushrooms 1/4 cup freshly chopped onion 1/4 stick of margarine or butter 1 garlic clove section 1/4 cup of wine (white zinfandel works well) Italian-flavored breadcrumbs Salt Pepper Paprika (approximately 1/4 - 1/2 tsp) Sage or poultry seasoning (approximately 1/2 - 1 tsp) 1 fried bacon slice
Remove stems from caps. Chop stems into fine pieces.
Chop 1/4 cup onions and 1 section of garlic and sauté in 1/4 stick Of melted butter or margarine in frying pan.
Add chopped mushroom stems and sauté until stems are soft. Flavor With salt, pepper, paprika, and sage to taste.
Add wine and heat a minute or two so alcohol burns off. Crumble in 1 slice of crisp, fried bacon.
Add Italian-flavored breadcrumbs until mixture is thick and stiff, Enough to spoon.
Coat inside of caps with soft butter, gently spoon mixture into Caps. Broil stuffed caps under broiler for 3-4 minutes (Time based On gas oven).
